The get glamorous diet / Tuna Nicoise
This great salad will keep for lunch the next day.
Preparation time: 10 minutes
Cooking time: 10 minutes
Serves 2
1 large egg
2tsp Dijon mustard
juice ½ lemon
3tbsp extra virgin olive oil
150g (5oz) green beans
75g (3oz) cherry tomatoes, halved
½ red onion, finely sliced
100g (4oz) cannellini beans, drained and rinsed
50g (2oz) pitted Kalamata black olives
125g (4½oz) tuna in olive oil
75g (3oz) baby salad leaves
½ avocado, sliced
1 First boil the egg. Place in a pan, cover with water, bring to the boil then, once boiling, take off the heat and leave for 6 minutes. Then put under cold running water until completely cold. Peel and halve.
2 Mix together the Dijon mustard, lemon juice, olive oil, salt and pepper.
3 Boil the green beans for 3 minutes, then drain and refresh under cold water.
4 Toss together the rest of the ingredients. Pour over the dressing, mix well and serve with the egg on the top.
Per serving: 512cals, 38g fat, 7g saturated fat, 15g carbohydrate
