 The get glamorous diet / Spicy chicken stir-fry


This spicy chicken dish is chic enough to serve to guests as well as being easy enough to rustle up mid-week after work. Double it up for a delicious supper for four.
Preparation time: 10 minutes plus 30 minutes marinating time
Cooking time: 10 minutes
Serves 2

2 garlic cloves, crushed
juice 1 lime, plus lime wedges
1tbsp sesame oil
2tbsp tamari
1 red chilli, chopped
2 skinless, boneless chicken breasts, cut into strips
1 red onion, cut into wedges
1 red pepper, cut into strips
1 pak choi, shredded
125g (4½oz) baby corn, cut lengthways
1tbsp toasted sesame seeds

Mix together garlic, half the lime juice, oil, 1tbsp tamari and half the chilli. Add chicken, mix well, cover and marinate for 30 minutes.
2 Heat a wok until smoking hot, add the chicken and marinade and cook until lightly browned. Remove from pan; cover with foil.
3 Add a little water to the wok, followed by the onion. Cook for 2 to 3 minutes. Add the pepper, pak choi and corn (and more water if it is dry). Cook for 2 minutes. Add chicken, remaining chilli, lime juice and tamari. Serve with lime wedges and sesame seeds.
