Preheat the oven to 180 C, 160 C fan, 350 F, gas 4.
Put 200g (7oz) mixed nuts (such as brazils, almonds, pecans and hazelnuts), 150g (5oz) mixed dried fruit (prunes, apricots, dried cherries), a tablespoon each of pumpkin and sunflower seeds and 75g (3oz) desiccated coconut into a food processor. Pulse until chopped, but not fine.
Gradually add 6tbsp apple juice until you have a softish dough. Roll into small balls, then squash flat into 3cm (1¼in) rounds. Put 1½ tbsp sesame seeds onto a plate and push in each cookie on one side. Now transfer to two baking sheets and bake for 15 minutes or until the cookies are lightly browned. Cool for 10 minutes, then store in a sealed container.
Makes around 26 mini cookies.
