 The get glamorous diet / Creamy cauliflower soup


This soup, pictured top right, is rich and smooth, without any cream.
Preparation time: 10 minutes
Cooking time: 20 minutes
Serves 4

1 onion, diced
1tsp cumin seeds
1tsp coriander seeds
2 garlic cloves, chopped
1 cauliflower, cut into small florets
1.2 litres (2pt) chicken or vegetable stock
2tbsp chopped fresh chives
50g (2oz) sheep's cheese

Cook the onion in a little vegetable stock in a large saucepan until it has softened.
2 Meanwhile, in a dry frying pan, add the cumin and coriander seeds and toast over a medium heat until aromatic. Remove from the pan and crush in a pestle and mortar.
3 Add the garlic to the softened onion and cook for another 2 minutes. Add the ground cumin and coriander seeds and mix well.
4 Add the cauliflower florets and pour over the stock. Cook for 15 minutes or until the cauliflower is soft. Leave to cool for 5 minutes.
5 Blitz with a hand blender. Check seasoning.Pour into bowls to serve and sprinkle with chopped chives, freshly ground black pepper and the sheep's cheese.
