 The get glamorous diet / Beetroot, pomegranate and goat's cheese salad


This luxurious salad tastes as sexy as it looks.

Serves 2

75g (3oz) baby leaf salad
2 cooked beetroot, cut into wedges
75g (3oz) soft goat's cheese, crumbled
1 pomegranate, seeds removed*
1tbsp pomegranate molasses**

Put the baby leaf salad and beetroot in a bowl and mix well.
2 Place in a serving bowl and scatter over the goat's cheese and pomegranate seeds and drizzle over the pomegranate molasses.
Per serving: 194cals, 10g fat, 7g saturated fat, 17g carbohydrate

*To remove the seeds, halve the pomegranate, then squeeze out the seeds over a bowl. Pull off any yellow membrane and squeeze again until most of the seeds have been removed. It only takes a minute.
**Pomegranate molasses is reduced pomegranate juice. It tastes sweet and sour and is available from delis, Middle Eastern shops and Sainsbury's.
